Meet the Chefs
Josh Silvers, Chef and Co-Owner of Jackson's Bar & Oven
Josh Silvers is an award-winning chef and co-owner of Jacksons Bar & Oven located in Santa Rosa, California. Chef Silvers came to Sonoma County in 1999 and opened his first restaurant, Syrah. Local restaurant critics immediately recognized Silvers’ talent and enthusiasm calling him "The Chef to Watch,” one of the best Chefs in Sonoma County. Over the last 25 years, Chef Silvers has continued to be featured in numerous local, National and International written publications. He also co-authored a very successful cookbook, “Down Home: Downtown-Seasonal Recipes from Two Wine Country Restaurants.” He has made appearances on the Food Network and local television stations and had his own radio show. He has been honored to cook at The James Beard House in New York City twice.
After the birth of his son, he sold his fine-dining restaurant, Syrah. He felt the county needed a more casual restaurant where you could get great food inspired by the wonderful bounty of produce, artisan food and wine and be comfortable enough to take your family. In 2010, he and his wife Regina opened Jackson’s Bar & Oven, named after their son and centered around Silvers' favorite way of cooking in a wood-fired oven.
Jackson’s has continued to be a popular and local favorite for over 15 years and features great food with inventive cocktails and a wine list from some of the best wine makers in the County. Chef Silvers is considered to be one of the "Old Guards” of Wine Country Restauranteurs, and the “go- to” Chef for information about Sonoma County restaurants and cuisine.
Jesse Mallgren, Executive Chef of Jordan Winery
Chef Mallgren brings decades of culinary expertise and a deep passion for farm-forward cuisine to his craft. A longtime resident of Sonoma County, he spent nearly 25 years as the executive chef at Healdsburg’s acclaimed Madrona Manor, where he was awarded a Michelin Star for 13 of those years. His cooking is deeply influenced by his childhood, where his mother’s homemade dishes—rich with global and exotic flavors—first sparked his love for the culinary arts.
Early in his career, Chef Mallgren honed his skills under the guidance of legendary chefs Gary Danko and Jeremiah Tower, whose mentorship helped shape his confidence and approach in the kitchen. Before his celebrated tenure at Madrona Manor began in 1999, he served as chef de cuisine at Syzygy in Aspen. Now at Jordan, Chef Mallgren continues to elevate his cuisine by blending time-honored technique with local, seasonal ingredients and a global perspective.
